I løbet af sit ph.d.-studium har Line Pedersen forsket i sødme- og fedtopfattelse samt de sensoriske interaktioner mellem sødme og fedt i mælkebaserede drikke. Hun har undersøgt, hvordan individuelle forskelle såsom smagssensitivitet og præference for sødme kan påvirke folks opfattelse og liking af mælkebaserede drikke.

De opnåede forskningsresultater bidrager til forståelsen af, hvordan reformulering af sukker- og fedtindhold i mælkebaserede drikke påvirker folks opfattelse og liking.

Ph.d.-studiet er gennemført ved Institut for Fødevarer, Faculty of Technical Sciences, Aarhus Universitet.
