Sustainable dairy - Exploring the link between climate-friendly diets and milk quality

Gayani Lokuge´s PhD studies focused on how climate-friendly dietary interventions can affect quality of milk and dairy products, with a specific focus on butter. Dairy cows' nitrogen excretion and enteric methane emissions can be decreased by adjusting the digestibility and quantity of silage in the diet. Similarly, adding fat, nitrate, and 3-nitrooxypropanol (3-NOP) to the diet are effective ways to reduce methane emissions. In her thesis, Gayani showed how these selected approaches changed fatty acids, vitamins, minerals and protein composition as well as functional properties of milk.

Her findings will provide valuable insights to ensure sustainable and high-quality dairy production while mitigating the environmental footprint of the industry.

The PhD study was completed at Department of Food Science, Faculty of Technical Sciences, Aarhus University.
